Available for purchase is this one of a kind, handmade gyuto. Gyuto, which translates to “cow sword”, is the Japanese version of a chefs knife. The gyuto is well suited to many different kitchen tasks and is an essential tool in the kitchen. This piece has several distinct features that makes it a truly one of a kind knife such as the unique gunome hamon, the heirloom fit 3 piece bolster, and the 6 domed nickel silver pins. The forged finish on the blade is referred to as “nashiji” and translates to pear skin in Japanese and is what lends itself to the knifes name. The gunome hamon is characterized by wave like semi-circles that are similar in size and appearance and is brought out and made visible through a meticulous polishing process. The blade also features a distal taper and a convex geometry thats thin behind the edge.

The octagonal handle is made from stabilized black and white ebony and is heirloom fit to a 3 piece fire blackened steel bolster. The handle is embellished with 6 polished domed nickel silver pins which add a tactile feel and some elegance to the overall piece. Everything is fastened together using a stainless steel tang nut which provides a mechanical connection as well as marine grade epoxy for an added chemical bond. This heirloom quality knife is sure to become a favorite in your kitchen or collection.
