Available for purchase is this one of a kind hand made chefs knife. The blade was forged from W2 high carbon tool steel and features a differential heat treatment resulting in a unique demarcation between the hardened edge, and softer, tougher spine called a hamon. This process of heat treating yields a blade that is tough enough to have some flex to it, and hard enough at the cutting edge to take a very sharp edge and have greater edge retention. The blade also features a distal taper, a thin convex grind, and is balanced right at the heel. The blades profile makes it great for wide range of kitchen tasks.

One of the key aesthetics of this knife is the fluted handle. Starting from a rectangular block of stabilized redwood burl, it was shaped into a cylinder and then sculpted by hand using various files and sanding dowels. The end result is a beautiful, unique handle that is also very comfortable in the hand. The textured copper bolster and pommel have been heirloom fit to ensure that any size changes in material over the life of the knife does not affect its comfortability. The flats on the sides of the bolster make for quick indexing and add a tactile feel while using a pinch grip.
